What is everyones favorite healthy meal?

Mine has to be the eating for life chicken noodle soup! It is super healthy and it makes great leftovers for the next days meal! I like to substitute the egg noodles with the NO yolk egg white noodles! More protein and less fat.

I will usually start by boiling about 4 chicken breasts. After they are cooked I usually shred them and put the chicken aside. Then I will start to boil 12 or so cups of swanson chicken broth. I will add about 2 tablespoons of olive oil, and then add the chicken back also a small bag of carrots chopped and 4 or 5 celery stalks chopped. I boil this until the veggies start to get a little soft. Then I add 1-2 bags of no yolk egg white noodles and boil until the noodles are soft. I usually experiment with the broth. If it is not flavorful enough, I will add some chicken boulion until it tastes good. You might have to add a little water too. The secret ingredient is crushed red pepper to taste. I love it a little spicy. Hope that helps. It is a lot different than the body for life recipe, but it is tasty!

If you like more veggies in your noodle soup, I really like adding cauliflower. Some people think its weird but I really like it in chicken noodle soup. Also some green onions add flavor as well. I also like adding the red pepper...spice is nice!

Mine has to be roasted chicken and brown rice cooked in chicken broth. You can't forget the raw spinach with a little white wine vinegar sauce.
